Anyone willing to indulge me in talking about running often ask, “What does it take to complete a 100 mile race?”. My answer is A LOT of eating while running. Below is a tried and tested recipe from Feed Zone Portables: A Cookbook of On-The-Go Food for Athletes.
Ingredients:
2 cups cooked brown rice
3 eggs
½ cup applesauce
2 tablespoons molasses
2 tablespoons rice or potato flour
¼ – 1/2 cup milk
Pinch of salt
Method
Step 1 – Heat oven to 325 degrees
Step 2 – Combine all ingredients in a blender. Fill muffin tin ¾ full
Step 3 – Bake 15 minutes or until centers are firm
Note > Add the milk slowly, starting with ¼ cup. More milk may be needed if the rice is dry from being in the fridge
